Hello guys, welcome again. Today we will be making courgette fritters. Again, it's a very simple recipe designed such that anyone can make it. It sure takes courgettes to a whole new level. I myself didn't use to like this vegetable but then I tried to create a recipe that can modify its flavor and texture. So I hope that you will also enjoy this.

INGREDIENTS:
- 6 courgettes, green
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp lime juice and zest
- 20 g cumin, toasted and crumbled
- 5-6 basil leaves
- 10 mint leaves
- 1 tbsp bread crumbs
- 2 tsp all-purpose flour
- salt
- pepper
- oil
METHOD:
- Grate the courgettes and sprinkle a little bit of salt on them. Leave it for 10 minutes and then after that put it on a muslin cloth and remove excess water from it.
- Now take a pan and heat 1 tsp oil. Add garlic and onion and saute until onion is soft and transparent. It will only take 3-4 minutes.
- Now cool this mixture down and add all the ingredients in a deep bowl. Chop all the herbs and add them too. Mix them well. Season the mix with salt and pepper.
- Heat enough oil just to cover the bottom of the deep pan. Drop a tbsp of courgette mix and flatten with the back of the spoon to make fritters. Fry on both sides for 2-3 minutes or until golden brown. Set them to drain on a kitchen paper.
SERVE THEM HOT.........
