SEMOLINA AND YOGURT PANCAKES WITH VEGETABLES

Hi guys, I am back with another recipe of these vegetable pancakes made with semolina flour. I created this recipe keeping in mind that the time required for preparation must be minimum. These are very good for a heavy breakfast and also are a vegan option. My choice of vegetables were potato,cabbage and carrots but ofcourse it can modified according to availability and preference. So let's get started now:




Pancakes




PREP TIME: 10 MINUTES

RESTING TIME: 30 MINUTES                                 

COOKING TIME: 10 MINUTES


INGREDIENTS:

  • Semolina flour, 2 cups
  • Cabbage, grated 1/2 cup
  • Carrot grated, 1/2 cup
  • 1 small raw potato grated
  • 1/2 cup yogurt
  • 1 small onion, grated
  • 1 tbsp ginger-chilli paste
  • 1 tbsp coriander,chopped
  • 7-8 curry leaves
  • 1/2 tsp baking soda
  • 1/2 tsp black salt
  • 1 tsp cayenne pepper
  • salt to taste
  • black pepper
  • oil

METHOD:

  • The method is quite simple. Take a deep bowl and mix all the ingredients mentioned above. Now rest the ingredients for 30 minutes.
  • Now heat up a flat non-stick pan and add little bit of oil. Add 1 tbsp of batter and spread it in a circular manner to get it as thin as possible. 
  • Cook for 3-4 minutes each on each side. They taste beast when served hot.
