Balushahi is a traditional dessert from my native place, India. It is a sweet which is very close to our heart . In resemblance it kind of looks like a doughnut but it is not. The difference lies in taste and texture. So we are sharing its recipe. It is very easy and straightforward.
RECIPE:
INGREDIENTS:
FOR DOUGH
- 2 cups all purpose flour
- 1/4 cup ghee(clarified butter)
- 1 tsp baking powder
- cold water
FOR SUGAR SYRUP
- 2 cup sugar
- 1 cup water
METHOD:
DOUGH
- Take a bowl and add flour and baking powder. Mix well.
- Now add the ghee and mix it with the help of your palm until you get a crumbly texture.
- Next up, we need to bring the dough together. The most important part here is that you must not try to knead the dough. We just need to bring it together. Just sprinkle some water on the dough and bring it together. Cover it and leave it to rest for 15 minutes.
In the meantime, we must prepare the syrup.
SYRUP
- In a heavy-bottomed, pan add sugar and water.
- Keep it on a medium heat and wait for sugar to dissolve. To avoid crystallisation, do not touch the pot until sugar dissolves.
- Now the consistency we want for caramel is one-thread consistency. It means touch the syrup with a clean forefinger and then touch your thumb and forefinger together and pull apart gently.One-thread consistency is when a single thread is formed (and does not break) when your forefinger and your thumb are pulled upart gently.
Now its time to fry the balushahi
- Add ghee in a frying pan and heat. Now make small to medium sized balls of the dough and roll them gently. Make a hole in the middle and fry it on low flame until golden colour is achieved.
- After they have fried, put them directly in the syrup.Let them soak in syrup for 15-20 minutes. Then enjoy these delicious sweet little treats.
