Yes that's right. We will be making cigars. But don't worry. These are far away from what you are imagining. Stuffing made from grated panner, potatoes and sautee vegetables and then rolled in spring roll wrappers. The cigars are served with a coriander-yogurt dip and a dollop of mayonnaise. So let's get started......
Stuffed Cigars |
INGREDIENTS:
- 2 medium sized boiled potatoes, grated
- 1 cup grated paneer
- 1 small carrot, finely chopped
- 1 green capsicum, finely chopped
- 1/2 cup corn kernels
- 1 cup cabbage, finely chopped
- 1 green chilli
- 1 tsp cayenne pepper
- salt to taste
- 1 tsp black pepper
- spring roll sheets
- 2 tsp cornflour, mixed with 2 tsp water
- oil
METHOD:
- Take a pan and heat 1 tbsp oil. Add the carrots, capsicum and cabbage and sautee for 2--3 minutes. Now add chilli and sautee until the vegetables becomes tender. All this cooking will be done on high heat.
- Now turn off the heat and add paneer, potatoes and corn kernels. Season the mixture with salt, black pepper and cayenne pepper.Now the mixture needs to be cool down before stuffing.
- Take a spring roll wrapper and place it on a surface with a corner facing towards you.
- Place 1 tbsp of mixture on the corner of the pastry and diagonally roll the pastry up tightly around the filling.When you reach to the middle of pastry, fold the corners from either sides and apply the cornflour mixture on then upward corner, and roll completely to seal the end.
- Heat the oil in a deep pan to temperature 180 degree C. Deep fry the spring rolls until golden brown and crispy.
Serve them hot......
