Dahi vada is a popular dish from my native place, India. This is a type of chaat made from soaked urad dal. I use a little proportion of moong dal too. Then the batter is fried and soaked in salted water. It is then served with yogurt and tamarind chutney. This might not be the conventional recipe but when it comes to flavourings, you will definitely love it.

INGREDIENTS
For Vada:
- 1 cup urad dal
- 1/4 cup moong dal
- 1/2 tsp asafoetida
- 1 tsp fennel seeeds
- 1 green chilli
- 1 tsp grated ginger
- oil
- salt
- water
Dressing:
- 1 cup yogurt
- tamarind chutney
- salt
- red pepper
- roasted cumin powder
PROCESS
- Firstly we need to prep the ingredients to make the batter for vada. Soak the urad dal and moong dal in seperate bowls for 4 hours minimum.
- Then we need to blend it with asafoetida, fennel seeds, green chilli and grated ginger.The consistency of paste should be very fine. Add water if required.
- Now we need to beat the batter for 10-15 minutes to incorporate air.
- Take a deep bowl and heat the oil. Now drop 1 tbsp of batter in oil and fry until the vadas until they turn golden brown. Frying should be done on high heat.
- Now we need to soak these vadas in salted water. They will be in the soaked water until served. For this, take a deep bowl and fill it with water. Now season the water with salt. Soak the vadas in it.
- Take a bowl and add yogurt. Now beat it until smooth. Add water in it and mix it until the consistency is that of a thick sauce.
SERVING
Take the vadas and drain excess water from them by firmly pressing them between your palms. Now put them in a serving plate. Add the yougurt and tamarind sauces on it. Now season it with salt, pepper , red chilli powder and roasted cumin powder. The dish works best when all the ingredients are cold. So , what are you waiting for.
